- Soak first. Add your herbs to cold or room-temperature water and let them soak for several hours before brewing - overnight is a convenient option that works well for any of our teas and ensures thorough pre-hydration of the plant material before simmering.*
- Bring to a gentle simmer, not a rolling boil. Once soaked, bring the pot slowly to a simmer rather than a hard boil. A gentle simmer extracts root and bark compounds effectively while preserving more volatile oils and vitamin C than a full rolling boil.*
- Simmer for 15 minutes with the lid on. The lid keeps aromatic volatile oils from escaping with the steam. 15 minutes is enough for most herbs without over-extracting or degrading heat-sensitive compounds.*
- Let it cool before drinking. Allowing the tea to cool to a comfortable drinking temperature before consuming also helps - very hot liquids can irritate the throat and digestive lining, and some compounds continue to extract as the tea cools.*
Batch brewing tip: Make a full pot, let it cool, and refrigerate for the week. You get one preparation effort and several days of ready-to-drink tea. Cold storage doesn't significantly degrade the compounds already in solution - what you extracted is what you keep.*
